Pizza Macaroni and Cheese



8 oz. Macaroni (about 4 cups cooked depending on size)
2 Tbsp. butter
2 Tbsp. flour
2 cups milk
1/2 cup onion, chopped
1/2 cup bell pepper, chopped
1/8 tsp. pepper
1/2 tsp. salt
3/4 cup chopped pepperoni
2 cups + 1/4 shredded cheese

Preheat oven to 350 degrees.  Cook macaroni according to package, drain and set aside.  In a frying pan melt butter.  Add flour to form a paste.  Whisk in milk.  Stir in onions, bell peppers, pepper and salt.  Cook on medium heat until hot but not boiling.  You don't want to cook the onion and peppers.  Fold the pepperoni and 2 cups of cheese into the macaroni.  Pour macaroni into a 2 qt. baking dish sprayed with non-stick spray.  Pour sauce over macaroni distributing onion and peppers evenly.  Sprinkle with other 1/4 cup of cheese.  Bake 30 minutes or until bubbly and cheese has melted.

Comment:  I was going through an old cooking booklet from Swiss's Brookfield that dated, I'm guessing back to the 60's.  I found a recipe for Macaroni Supreme which used dried beef instead of the pepperoni.  It also called for Worcestershire sauce, onion juice and prepared mustard.  Well, I got an idea for a Pizza dish so I eliminated the sauce, juice and mustard and added the onions and peppers.  This dish is like eating a pizza, without the tomato sauce, with a fork.  It's delicious!  Now think of all the other things you could add to this... just about anything you might order on your pizza.  So how good is this?  I could have taken a fork, sat down with the whole dish and eaten until I was too stuffed to move!  It's that good.
