Gluten Free Sausage Balls
1 cup gluten free baking mix
1 tsp. baking powder
1/2 tsp. baking soda
1 lb. lean sausage, cooked and drained
2 cups shredded cheese
1/2 cup milk
Preheat oven to 350 degrees. Mix all ingredients in a bowl. Shape into 1 - 1 1/2" balls. Place on a baking sheet covered with parchment paper. Bake 12-15 minutes or until golden brown. Makes 3 1/2 - 4 dozen.
Comment: I love sausage balls but since I'm trying to do away with gluten I thought I would never enjoy them again. Then I spotted a box of Natural Gluten Free Cafe All Purpose Baking Mix. The back carried 2 recipes. One for muffins and one for Zucchini Bread - both sweet - so I decided to work it up along the way. The above recipe turned out perfect. The sausage balls come out light and so good. Use your favorite choice in cheese flavors. I used extra sharp cheddar but some good blends would be good too. This will be my one and only Sausage Ball recipe from now on.

Hot Crab Casserole
2 cups Imitation Crab, chopped
1 can cream of mushroom soup
2 celery ribs, finely chopped
1/2 cup mayonnaise
2 Tbsp. dehydrated onions
1/2 tube butter-flavored crackers (crushed)
2 cups shredded cheddar cheese
1/2 cup crushed potato chips
1/4 cup sliced almonds
Preheat oven to 350 degrees. In a large bowl combine crab, soup, celery, mayonnaise, onions, crackers and cheese. Pour into a 2 qt. baking dish sprayed with non-stick spray. Bake 20-25 minutes or until bubbly. Sprinkle with crushed chips and almonds. Bake another 10 minutes or until lightly browned.
Comments: This is one I make frequently for my dear friend Dusty. I've made this dish using real crab but the imitation actually tastes better and is a lot less expensive. If you do decide to try this with real crab use about 1 cup or the crab will overpower all other flavors. The crushed crackers added to the mix thickens as well as adds another flavor. Sausage & Pepperoni Pizza Puffs
3/4 cup all purpose flour
3/4 tsp. baking powder
1/2 tsp. garlic powder
3/4 cup milk
1 egg, lightly beaten
1 cup mozzarella cheese, shredded
1/2 cup mini pepperoni
1/2 lb. sausage, cooked and crumbled
pizza sauce
Preheat oven to 375 degrees. Spray a 24 cup mini-muffin pan with non-stick spray. In a large bowl whisk together the flour, garlic powder and baking powder. Whisk in the milk and egg. Stir in the mozzarella, sausage and pepperoni. Let stand 10 minutes. Divide into 24 mini muffin cups. Bake 20-25 minutes or until puffed and golden. Serve with heated pizza sauce for dipping.
Commet: I found this recipe on Pinterest where it had been posted by Make Ahead Meals For Busy Moms. This is delicious and can be made healthy by using turkey pepperoni and turkey sausage. As you can see I didn't take it the healthy way. I took these to a friends house who was having company over. She served these to her company and between the 4 people present, they ate all 20. They are that good. Yes I kept 4 for myself.
