Baked Broccoli Bites



12 oz. broccoli, chopped, thawed
1 large egg
2 Tbsp diced onions
1/4 cup grated parmesan cheese
1/4 cup shredded mozzarella cheese
1/2 cup whole wheat breadcrumbs
1 tsp. minced garlic

Preheat oven to 425 degrees.  Spray a baking sheet with nonstick cooking spray.  Mix all ingredients in a large bowl.  Refrigerate for about 30 minutes.  Shape mixture into bite size logs, pressing firmly together to prevent them from falling apart.  Place on baking sheet.  Bake 20-22 minutes or until lightly browned and hot throughout.

Comment:  A version of this recipe came from a site titled Yummly.  I did my usual and made a couple of changes.  I used chopped broccoli instead of the larger pieces or fresh.  I eliminated the salt and pepper.  The recipe called for 1 tsp of each and I found that was too much due to the salt in the cheeses.  The original recipe quoted this as having only 12 calories per serving with the recipe making 4 servings.  I can't vouch for that but I can say that this is one delicious 'snack' food.  I'll be making this later using spinach.  I have a feeling it will be just as good and possibly even better.

Sausage & Pepperoni Pizza Puffs


3/4 cup all purpose flour
3/4 tsp. baking powder
1/2 tsp. garlic powder
3/4 cup milk
1 egg, lightly beaten
1 cup mozzarella cheese, shredded
1/2 cup mini pepperoni
1/2 lb. sausage, cooked and crumbled
pizza sauce

Preheat oven to 375 degrees.  Spray a 24 cup mini-muffin pan with non-stick spray.  In a large bowl whisk together the flour, garlic powder and baking powder.  Whisk in the milk and egg.  Stir in the mozzarella, sausage and pepperoni.  Let stand 10 minutes.  Divide into 24 mini muffin cups.  Bake 20-25 minutes or until puffed and golden.  Serve with heated pizza sauce for dipping.

Commet:  I found this recipe on Pinterest where it had been posted by Make Ahead Meals For Busy Moms.  This is delicious and can be made healthy by using turkey pepperoni and turkey sausage.  As you can see I didn't take it the healthy way.  I took these to a friends house who was having company over.  She served these to her company and between the 4 people present, they ate all 20.  They are that good.  Yes I kept 4 for myself.

Cereal Square Snack



1 (16 oz.) pkg. cereal squares (rice, oats, corn, wheat)
2 cups whole pecans
1/2 cup corn syrup
1/4 (1/2 stick) butter
1/2 cup packed brown sugar
1 tsp. vanilla
1/2 tsp. baking powder

Preheat oven to 250 degrees. Combine cereal and pecans in 9 x 13 baking dish. In a 2 cup microwavable bowl mix corn syrup, brown sugar and butter. Microwave on high 1 1/2 minutes. Stir. Microwave on hi for 1 minute more or until mixture is boiling. Stir in vanilla and baking soda. Pour over cereal & nuts. Stir until evenly coated. Bake 1 hr. tossing every 20 minutes. Cool. Makes about 2 qts.

This is a fun snack. I've even made it with shredded wheat squares, used peanuts instead of pecans and even sprinkled a handful of coconut in for extra taste. You can add pretzels and salted mixed nuts for the sweet/salty taste.
